As always the question of the day is, “what are we going to do for dinner?” There are days when I just don’t feel like cooking and going out doesn’t appeal to me either. Fortunately, hubby cooks and on one such occasion we had some leftover spaghetti in the refrigerator. He decided to turn last night’s leftover into a re-born gourmet entree and took the plain spaghetti with red sauce and added sauteed mushrooms and fresh basil. He took it one step further and “plated” mine in a small ramekin with a sprinkling of parmesan cheese since I wasn’t very hungry. It was really good and I got to thinking that it would be perfect as an appetizer if we ever had a family gathering or party at home.
